Beef Chow Fun (Simplified Chinese: 干炒牛河; Traditional Chinese: 乾炒牛河; Pinyin: Gān chǎo niú hé; Cantonese: gon chao ngau ho) is a Cantonese stir-fry of wide flat rice noodles with beef, bean sprouts, and soy seasoning, prized for smoky wok hei.[1]
Characteristics
Noodles should be separate and lightly charred, not soggy. Bean sprouts add crunch; beef is usually thinly sliced and velveted. "Dry-fried" means little sauce pooling.
