Braised Pork with Vermicelli (Simplified Chinese: 猪肉炖粉条; Traditional Chinese: 豬肉燉粉條; Pinyin: Zhūròu dùn fěntiáo) is a Northeast (Dongbei) home stew of fatty pork simmered with thick potato-starch noodles (粉条) that soak up savory broth—comfort food closely associated with Heilongjiang Food winters.

Characteristics

Broth is rich and lightly thickened by noodle starch; pork is soft; noodles are chewy and translucent. Seasoning is savory with soy, scallion, and ginger rather than heavy chili.

Ingredients (overview)

Pork (often belly or bone-in pieces), dried potato vermicelli (soaked), soy sauce, scallion, ginger, star anise or related spices, water or stock. Cabbage may be added in some homes.

History and culture

Listed among famous Longjiang / Dongbei dishes with Stewed Chicken with Mushrooms and Di San Xian. It exemplifies Northeast one-pot cooking built for cold climates.

Serving and variations

Family main with rice or as a standalone stew. See Heilongjiang Food, Stewed Chicken with Mushrooms, and Di San Xian.
