Fish-Fragrant Eggplant (Simplified Chinese: 鱼香茄子; Traditional Chinese: 魚香茄子; Pinyin: Yúxiāng qiézi) is a Sichuan dish of eggplant cooked in yuxiang (“fish-fragrant”) sauce—sweet, sour, salty, and chili-aromatic—despite containing no fish. It belongs to the same flavor family as Yuxiang Shredded Pork.

Characteristics

Eggplant pieces turn soft and glossy in a red-tinged sauce with garlic, ginger, scallion, and pickled chili notes. The taste should be balanced, not only spicy.
