Lamb Skewers (Simplified Chinese: 羊肉串; Traditional Chinese: 羊肉串; Pinyin: Yángròu chuàn) are charcoal-grilled skewers of lamb or mutton seasoned with cumin, chili, and salt—rooted in Xinjiang and Muslim Chinese barbecue traditions and now a nationwide night-market staple.[1]
Characteristics
Meat is bitten with smoky fat and dry spice rub rather than wet sauce. Skewers cook quickly over intense heat; vendors fan the coals constantly.

Cubed lamb or mutton (sometimes with fat pieces), cumin, chili flakes, salt, and optional egg wash or oil. Beef and chicken chuan variants exist.
History and culture
Closely associated with Xinjiang Food and Hui/Uyghur barbecue craft, lamb skewers spread to cities across China as street BBQ culture. They are among the most recognizable Chinese grilled snacks.
