Lishui Food
| ||||||||||||||||||||||||||||||||||||||||||||||||||||
Lishui Food (丽水美食) reflects the food traditions of Zhejiang's mountainous southwest. The local food map is county-based: Jinyun is known for barrel-baked shaobing, Suichang for long rice dumplings and chili-seasoned food, and Qingyuan for mushrooms. Rice, glutinous rice, bamboo shoots, tea, mushrooms and seasonal mountain produce appear alongside river and field foods.[1][2]
Lishui Food by Area
Lishui governs Liandu district and seven counties, as well as the county-level city of Longquan. Jingning is a She autonomous county.[1]
- Liandu: Chuzhou white lotus seeds are grown locally and used in Lishui's regional food products, including a lotus-seed-paste mooncake with egg yolk.[15]
- Qingtian: The Qingtian rice-fish system raises fish in rice paddies. Rice and fish are both eaten locally, and the farming system has a history of more than 1,300 years.[13]
- Jinyun: Jinyun shaobing is a yeast-dough roll filled with pork, dried vegetables, sesame or maltose, then baked against the inside of a barrel-shaped oven.[4]
- Suichang: Local food is known for chili-seasoned dishes and handmade pickled vegetables. Suichang Changzong is a long rice dumpling associated with the county.[5][6]
- Songyang: Songyang salt-baked chicken is cooked slowly with coarse salt, mushrooms, scallions and cooking wine. Songyang is also the place of origin of yellow rice cake (黄米粿).[7][8]
- Yunhe: Field snails from the Yunhe rice terraces are used in local dishes. A traditional stew combines loach, cucumber and red yeast rice-wine vinasse.[3][14]
- Qingyuan: Qingyuan oilseed rape pot is a one-pot dish of local greens, tofu, mushrooms, bamboo shoots and pork. Qingyuan is also known for shiitake mushrooms and a long-running forest-mushroom growing tradition.[3][10]
- Jingning: Jingning She foods include sheet jelly, breakfasted with egg and vegetables, and pounded glutinous rice cake mixed with sesame sugar for festivals and family occasions. Huiming tea is another local specialty.[3][9][11]
- Longquan: Huangguo (黄粿), a golden rice cake made with glutinous rice and plant-ash water, is eaten around the Lunar New Year. Longquan also has seasonal Qingming foods such as qingtuan, wild greens and shepherd's-purse wontons.[12]
