Lu Rou Fan (Simplified Chinese: 卤肉饭; Traditional Chinese: 滷肉飯; Pinyin: Lǔròu fàn; Taiwanese: ló͘-bah-pn̄g) is a Taiwanese rice bowl topped with soy-braised minced or finely chopped pork belly and its savory sauce, often with pickled greens or egg on the side. It is everyday comfort food across Taiwan.[1]
Characteristics
The pork should be glossy and savory-sweet from long braising; rice soaks up the sauce. Texture may be mince-like or small cubes depending on shop style.
Ingredients (overview)
Pork belly, soy sauce, rock sugar or sugar, aromatics (garlic, fried shallot), and rice. Tea eggs or boiled eggs are common companions. House formulas differ.
History and culture
Braised-pork rice is a staple of Taiwanese eateries and night-market culture, reflecting southern Chinese braising habits adapted into a fast, affordable bowl meal.
Serving and variations
