Roast Goose (Simplified Chinese: 烧鹅; Traditional Chinese: 燒鵝; Pinyin: Shāo é) is a Cantonese siu mei roast of goose with glossy, crisp skin and savory meat, hung and chopped to order in roast-meat shops.[1]
Characteristics
Skin should crackle; meat is richer than roast duck. Often served with plum sauce. Closely related shop craft produces Char Siu and roast duck in the same siu mei tradition.

History and culture
