Steam Pot Chicken (Simplified Chinese: 汽锅鸡; Traditional Chinese: 汽鍋雞; Pinyin: Qìguō jī) is a Yunnan specialty in which chicken and aromatics are cooked in a ceramic steam pot (汽锅) whose central chimney channels boiling steam into the vessel, yielding a clear, intensely fragrant broth.

Characteristics

Broth is light in color but rich in chicken aroma; meat stays tender. Medicinal herbs such as Cordyceps or ginseng appear in banquet versions; everyday pots use ginger and scallion.
