Suan Ni Bai Rou
|
Suan Ni Bai Rou (Simplified/Traditional Chinese: 蒜泥白肉; Pinyin: Suàn ní bái ròu) is a Sichuan cold appetizer of thinly sliced boiled pork belly ("white meat") dressed with pounded raw garlic, soy, chili oil, and sesame—not the same dish as Northeast Suan Cai Bai Rou (pickled cabbage with pork).
Characteristics
Pork is tender and barely seasoned before dressing; heat and aroma come from garlic-chili sauce. Served at room temperature as a shared starter.
Ingredients (overview)
Pork belly or leg, garlic paste, soy sauce, chili oil, vinegar, sesame oil/paste, scallion. Contrast ingredients with Suan Cai Bai Rou (suan cai stew).
History and culture
Classic Sichuan cold plate on Sichuan Food, sitting with Fuqi Feipian, Bang Bang Chicken, and other appetizers rather than Dongbei stews.
Serving and variations
Cold shared starter. See Sichuan Food; do not confuse with Suan Cai Bai Rou.
