Ningxia Food (宁夏美食) brings together local cuisines and food traditions across the Ningxia Hui Autonomous Region. Hui Muslim foodways are an important part of the region's culinary life, alongside Han and other local traditions. Wheat foods, beef and lamb, Yellow River ingredients, goji berries and seasonal produce all appear in regional cooking; dishes and customs differ from city to city.

Well-known foods include hand-grabbed lamb (手抓羊肉), lamb offal (羊杂碎), Wuzhong early tea (吴忠早茶), Guyuan yanmian rourou (燕面揉揉), Dawukou liangpi (大武口凉皮) and Zhongwei haozimian (中卫蒿子面). Regional products include Yanchi Tan sheep, Zhongning goji and Helan Mountain East Foothill wine. These are distinct local specialties, not ingredients used in every Ningxia dish.[1][2]

Ningxia Food by City

Ningxia has five prefecture-level cities. The foods below are examples associated with each place in government and regional food guides.

City Representative foods and products
Yinchuan Hand-grabbed lamb, lamb offal, wheat pastries and evening-market snacks such as là hú hú (辣糊糊), a spicy hot-pot-style snack. The city is also a center of the Helan Mountain East Foothill wine region.[3][4]
Shizuishan Dawukou liangpi (大武口凉皮), roll-style liangpi, wheat-gluten snacks and spicy là hú hú. Dawukou liangpi is known for its wheat aroma, chewy sheets, gluten and chili dressing.[5][6]
Wuzhong Early tea with beef noodles, lamb offal, hand-grabbed lamb, Wuzhong white-water chicken (吴忠白水鸡), eight-treasure tea (八宝茶) and meat sticky rice (肉粘饭). Wuzhong's breakfast culture combines tea, hot dishes, noodles, pastries and cold dishes.[7][8][9]
Guyuan Yanmian rourou, Longde warm pot (隆德暖锅), Jinyuan steamed chicken (泾源蒸鸡), jiu wan shi san hua (九碗十三花), potato dishes and local beef and lamb.[10][11]
Zhongwei Haozimian (蒿子面), lentil noodles (扁豆子面), Zhongwei mixed vegetable salad (中卫杂拌), là lā fen (拉拉粉), and local lamb dishes. Zhongning goji and Zhongwei's desert-grown produce are also prominent regional products.[12][13]

Lamb and beef dishes

  • Hand-grabbed lamb (手抓羊肉): lamb is cooked and served in pieces, often with a simple seasoning or dipping sauce. It can be eaten hot, cold or pan-fried. Ningxia's government food guide lists it among the region's signature dishes.[14]
  • Salt-baked or steamed lamb (盐池滩羊、清蒸羊羔肉): dishes use cuts of lamb cooked by boiling, steaming, roasting or braising. Yanchi Tan sheep is a protected regional product; the meat is used in both everyday cooking and banquet dishes.[15]
  • Lamb offal (羊杂碎): a soup or braised dish made with parts such as stomach, heart, liver and lung. Wuzhong is particularly associated with lamb offal served as part of early tea and breakfast meals.[7][16]
  • Wuzhong white-water chicken (吴忠白水鸡): a local chicken dish cooked in a seasoned broth; it is commonly listed among Wuzhong's traditional specialties.[9]
  • Lamb soup and lamb stew: lamb cooked with water, vegetables or seasonings; recipes differ by city, cut and household.
  • Beef dishes: beef appears in noodles, soups, cold cuts and hot-pot dishes, including local styles served with breakfast tea in Wuzhong and Guyuan.[7][10]

Heritage recognition applies to a named craft or product tradition; it does not mean that every local dish shares one recipe.[7][17][11][6]
