Zhejiang Food (also called Zhe cuisine; Chinese: 浙菜; pinyin: Zhècài) is one of the Eight Great Cuisines of China. It draws on Hangzhou, Ningbo, and Shaoxing traditions and favors freshness, mild seasoning, and elegant presentation rather than heavy spice.

Introduction

Zhejiang's lakes, rivers, and coastline supply fish, shrimp, and seasonal produce. Classic Zhe cooking aims to keep ingredients tender and aromatic, using techniques such as quick stewing, steaming, and light braising. Shaoxing wine also appears as a cooking liquid and marinade.

Characteristics

  • Light, fresh, and slightly sweet flavor profiles
  • Emphasis on seafood and lake fish
  • Refined knife work and attractive plating
  • Notable regional branches: Hangzhou, Ningbo, Shaoxing

Famous dishes

Signature dishes include West Lake vinegar fish (西湖醋鱼), Dongpo pork (东坡肉), beggar's chicken, and Ningbo-style seafood. Many travelers experience Zhejiang Food first in Hangzhou teahouse and lakeside restaurants.
