Mao's Red-Braised Pork (Simplified Chinese: 毛氏红烧肉; Traditional Chinese: 毛氏紅燒肉; Pinyin: Máo shì hóngshāo ròu) is a Hunan-style pork belly red-braise associated with Shaoshan "Mao family" restaurant cooking. It is a regional branded cousin of the wider Chinese Hong Shao Rou tradition, typically richer in chili and Hunan seasoning than many Jiangnan sweet versions.

Characteristics

Glossy soy-caramel braise with fatty-lean pork cubes; Hunan versions often push savory-spicy depth rather than only sugar sweetness. Served as a signature restaurant plate.
