Mapo Eggplant (Simplified/Traditional Chinese: 麻婆茄子; Pinyin: Mápó qiézi) is a Sichuan-style dish of soft eggplant braised in a spicy, aromatic sauce built from chili bean paste, similar in seasoning logic to Mapo Tofu but with eggplant as the main ingredient instead of tofu. It should not be confused with Fish-Fragrant Eggplant, which uses the separate "fish-fragrant" (yuxiang) flavor profile.

Characteristics

Eggplant is silky and oil-absorbent; sauce is red, savory, and chili-fragrant with optional Sichuan pepper numbness. Minced meat appears in some versions, echoing mapo tofu, but vegetarian plates are common.
