Zhejiang Food (also called Zhe cuisine; Chinese: 浙菜; pinyin: Zhècài) is one of the Eight Great Cuisines of China. It draws on Hangzhou, Ningbo, and Shaoxing traditions and favors freshness, mild seasoning, and elegant presentation rather than heavy spice.
Introduction
Zhejiang's lakes, rivers, and coastline supply fish, shrimp, and seasonal produce. Classic Zhe cooking aims to keep ingredients tender and aromatic, using techniques such as quick stewing, steaming, and light braising. Shaoxing wine also appears as a cooking liquid and marinade.[1]
