Peking duck, a Beijing specialty

Beijing Food (also called Jing cuisine; Chinese: 京菜; pinyin: Jīngcài) is the cooking of China's capital—a mix of imperial court traditions, northern wheat staples, and influences from Shandong and Muslim (Hui) communities. It is hearty, savory, and rich in roast and wheat-based snacks.

Introduction

As a political center for centuries, Beijing absorbed chefs and recipes from many regions. Court cuisine prized elaborate banquets, while street food and hutong snacks stayed practical and filling. Today Beijing Food is best known internationally for roast duck, but locals also rely on noodles, dumplings, and quick fried dishes.[1]

Characteristics

  • Northern wheat staples: noodles, pancakes, dumplings
  • Roast and braised meats with savory sauces
  • Influence from Shandong (Lu) techniques and imperial kitchens
  • Strong snack and breakfast culture
