Crispy Roast Pork (Simplified Chinese: 烧肉; Traditional Chinese: 燒肉; Pinyin: Shāo ròu; Cantonese: siu yuk), also called crispy pork belly, is Cantonese roast pork with blistered crackling skin and seasoned meat—central to Siu Mei counters with Char Siu and Roast Goose.[1]
