Soy Sauce Chicken (Simplified Chinese: 豉油鸡; Traditional Chinese: 豉油雞; Pinyin: Chǐyóu jī; Cantonese: see yao gai) is a Cantonese chicken cooked in or glazed with a soy-based master stock, commonly hung beside Char Siu and Roast Goose in Siu Mei shop windows.[1]

Characteristics

Skin and meat take on a mahogany soy color; flavor is savory-sweet from soy and aromatics. Texture is closer to gently cooked chicken than crisp roast skin (contrast Crispy Roast Pork).

Whole chicken, light and dark soy, sugar or rock sugar, ginger, scallion, star anise and related spices in a reusable master stock. Exact shop stocks are closely guarded.

History and culture

A standard siu mei item in Hong Kong Food and Guangdong roast shops, filling out the roast-meat counter with Char Siu, Roast Goose, and Crispy Roast Pork.
