Introduction
Rice is the staple grain for much of China. After cleaning, hulling, and milling, rice retains a large share of its nutrients and appears not only as steamed rice but also as snacks: crispy crusts, sticky dumplings, porridges, and festive cakes.

- Guoba 锅巴 — crispy rice crust, also used in stir-fries
